Easy Peasy Mince Pies...

Is there really anything more Christmassy than a mince pie? I don't think so really, with a bit of Baileys cream is my fave, I've started to make my own but I don't always have time to make my own pastry so this is my quick and easy recipe for home made mince pies, which are soon tasty.


  • 500g Roll of readymade shortcut pastry (leave at room temp for about 45 mins)
  • 1 Jar mincemeat
  • 1 Egg
  • Pinch of sugar (for each mince pie)
  • Icing sugar (to sprinkle over)


  1. First off pre heat your oven to 220 degrees 
  2. Get your room temp pastry and a rolling pin and roll it out, roll it so it's about as thick as a £1 coin
  3. Next, get a pastry cutter or a glass in my case and cut out about 12 little circles of pastry
  4. Grease a muffin pan with a bit of oil, and put each of your circles of pastry in there and pat them down in to the muffin shape
  5. Then put about 1 and a half tsp of mincemeat in each of your little pies
  6. Once they're all full, re roll the rest of your pastry and get creative with what you want on the top. You could have some stars on top or a whole top, whatever you like
  7. When they're all covered, put a small cross in the top of each one
  8. Whisk up your egg and with a brush cover all the top and edges of your pastry
  9. Get a pinch of sugar and sprinkle on top of each pie
  10. Pop your pies into the oven for about 15 mins or until they're golden on the top
  11. Leave to cool and serve how ever you like, ENJOY!
