Christmassy Oat And Cranberry Cookies...

These may look like normal oat and raisin cookies but they have a slight Christmas twist, Cranberries instead of raisins. These are the best cookies I make. they're so chewy and the cranberries make them taste so Christmassy I love them, especially with a hot chocolate.

  • 85g Butter
  • 80g Soft brown sugar
  • 80g Dried Cranberries
  • 1 Tsp Vanilla extract
  • 75g Porridge oats (I use wholemeal oats)
  • 40g Sunflower seeds (optional)
  • 1 Beaten egg
  • 50g Plain flour
  • 1/2 Tsp salt
  • 1/4 Tsp Bicarbonate of Soda
  1. First up you want to pre heat your oven to 180 degrees 
  2. Then add your butter and sugar to a bowl and cream together until it's light and fluffy
  3. Once its creamed, add in all the other ingredients and mix together thoroughly
  4. Once mixed, roll them into little balls and put them onto a baking tray covered in grease proof paper
  5. Flatten the balls down with your hands
  6. Bake your cookies for about 12 minutes and cool them on a baking tray.
  7. You could dip hand of them in melted chocolate once their cooled, but I prefer them by themselves.
