Chili Avocado, Halloumi and Hummus Toast

In my eyes there's nothing better than some avocado toast for that quick but filling lunch. But sometimes it can get a little bit boring so I've created this beauty for  a little twist.

Ingredients
  • 4 Slices of halloumi
  • 1 Whole organic avocado
  • 4 Slices fresh rye bread 
  • 1/2 Fresh lime
  • 1 tsp Dried chili flakes
  • 1/2 tsp Rock salt
  • 1/2 tsp Pepper
  • 1 tsp Hummus (per slice)
  • 1 tsp Coconut oil
  • Dribble of balsamic vinegar
Method
  1. First up prepare the avocado. Cut up into cubes and add to a bowl, squeeze in the lime, add salt, add pepper and add the chilis and mix, put to the side.
  2. While thats to the side, add the coconut oil to a pan and melt, then add the halloumi and cook
  3. While thats cooking add the rye bread to your toaster and toast lightly.
  4. When toasted, spread the hummus on to each slice 
  5. Spoon on the avocado and leave in chunks
  6. Once the halloumi is nice and brown add on the top
  7. Dribble the balsamic vinegar over the top, not too much just a little, and enjoy!
