Chunky Double Chocolate Muffins

So if you usually read my blog you will know that I love my food, I usually eat really healthy and clean, but everyone deserves a treat sometimes so I thought go hard or go home ;). These are the nicest muffins I have ever made if I do say so myself, they're so soft and chunky, they may look messy and boring but they're so not, and they're perfect with a massive cup of tea. Let me know what you think.

  • 230g Plain Flour
  • 50g Cocoa Powder
  • 1tbsp Baking Powder
  • Pinch of Salt
  • 115g Caster Sugar
  • 2 Eggs
  • 250ml Milk (I like either full fat or semi-skimmed)
  • 85g Butter 
  • 1tsp Vanilla Extract
  • 2 White Chocolate Bars (of your choice, I used big bars of Milky Bars)
1. First of all preheat your oven to 200 Degrees, so it's nice and warm for your muffin mixture
2. Onto your baking, Sift together flour, cocoa powder, salt and baking powder. Then slowly stir in the sugar.
3. Add the butter to a saucepan on a low heat melt the butter then leave to cool.
4. Beat the eggs in a bowl then add the butter, vanilla extract and milk and beat all together.
5. Make a well/hole in the middle of all the dry ingredients, then poor in the beaten ingredients, be sure to not over mix.
6. Cut up the chocolate bars into little chunks and add to the mixture.
7. Add the muffin cases to a muffin tray and spoon in the mixture (about 2 tbsp should be enough per case).
8. Bake in the preheated oven for about 20 minutes. After 10 minutes, if you have more than one tray switch them over.
9. When they're done they should be springy to touch, if they leave a mark leave for a little bit longer.
10. Leave to cool for about 10 minutes and ENJOY.
