Raw Almond Butter Cups

Now if you follow me on Twitter or on Instagram you will know I've been on a bit of a health kick recently, living a plant based, vegan lifestyle is literally so rewarding! I've been so full of energy and feeling so upbeat and happy, research doesn't lie when they say unhealthy processed food causes depression. When I didn't care what I ate I felt so down all the time and stodgy from all the food, its just not a nice way to live! Since I've been eating plant based and working out 3-5 times a week I honestly feel so much happier within myself.

As I am human, and a girl I obviously get the serious chocolate craving every now and again, so because I can't eat chocolate if I still want to feel like I can move this is the perfect alternative, and not only that it's so simple and quick!

Ingredients: (makes about 6 cups)
  • Cacao Powder- 1/4 cup
  • Coconut Oil (melted)- 1/4 cup
  • Agrave Nectar- 2 tbsp
  • Salt- 1 tiny pinch
  • Almond Butter- 6 tsp
Method:
  1. Add all the ingredients into a mixing bowl and mix thoroughly to make sure there are no lumps and bumps left.
  2. Add 1 teaspoon into a cupcake paper holder or just enough to cover the bottom of the holder and put into the freezer until the chocolate has hardened (about 5 mins)
  3. Take out the freezer and add the almond butter to each of the cups
  4. Add the remaining chocolate (which may have hardened so just put into the microwave for about 30 seconds and mix again) onto each of the cups. Then put back in the freezer for about 10 minutes.
  5. Enjoy.
