Bulgur Wheat and Vegetable Salad

This is one of my favourite recipes for a quick an easy lunch, and also brilliant if its coming towards the end of the week and you have such random things in your fridge like I do at the moment. Its the most simple thing to make and it is so tasty, even better that it is completely plant based, vegan, veggie, everything healthy you can think of!

(Serves 1 as a whole meal, or 2 as a side dish)


  • 100g bulgur wheat
  • 400ml boiling water
  • 1tbsp herbs of some kind- I use Santa Maria Chili and Lime
  • 1 big handful of sweetcorn (frozen or fresh)
  • 1 big handful spinach 
  • 1/4 yellow/red pepper 
  • 1/2 carrot
  • 4 stems of broccoli 
  • 1tbsp coconut oil
  • 1/2 avocado
  • 1 heaped tbsp hummus (homemade or pot of organic)
  1. Get your herbs and mix together with the boiling water. Put on the hob on a high heat until the water boils.
  2. Once the water is boiling, add the bulgur wheat and stir with a fork, lower the heat and simmer for 15 minutes.
  3. While your bulgur wheat is boiling away, chop up all your veg as big as you like it, i like mine small.
  4. Add your coconut oil to a frying pan/wok and leave to melt. Once its melted add all your vegetables and cook until soft. (This just makes it so much quicker)
  5. Once the bulgur wheat has cooked, leave to stand for about 5-10 minutes, separate the grains with a fork.
  6. Add your bulgur wheat to the vegetables and stir all together.
  7. Add to a bowl and add the hummus and avocado on the top. And there you have it all ready to eat.
It really is that easy and the total time it takes is about 20-25 minutes! Perfect for a quick lunch i find.
